Chocolate Chip, Oatmeal, Pecan Cookies

I also could have called these cookies “The Answer to Any Bad Day”. Because a warm, gooey cookie, straight out of the oven? All problems instantaneously solved.
Baking cookies may seem intimidating – but its not at all! Once you get a base recipe down, you should be good to go. This is a spin on a classic chocolate chip cookie recipe, and you can do all sorts of things with it! Use any of these combinations for deLICious cookies.
Just sub out the chocolate chips, pecans, and oatmeal…
For White Chocolate Craisin Cookies
• 1 C white chocolate chips
• 1/2 C craisins
• 1/2 C macadami nuts
For Rainbow Chip Cookies
• 2 C M&M’s
For Oatmeal Raisin Cookies
• 1 C Oatmeal
• 1 C Raisins
• 1 t cinnamon
For Butterscotch Heath Cookies
• 1 C butterscotch chips
• 1/2 C oatmeal
• 1/2 C toffee bits
… the possibilities are endless!! (For a quick cool treat, make an ice cream sandwich with them… SO delicious, and perfect for any picnic or BBQ.)
Chocolate Chip, Oatmeal, Pecan Cookies
• 2 sticks unsalted butter
• 3/4 C sugar
• 3/4 C light brown sugar, packed
• 2 large eggs, room temp
• 2 t pure vanilla extract
• 1 t baking powder
• 2 1/4 C all purpose flour
• 1/2 t salt
• 1 C semi sweet chocolate chips
• 1/2 C rolled oats
• 1/2 C chopped pecans
1. Preheat the oven to 375 degrees. In a large bowl, combine the flour, baking powder and salt with a whisk. Set aside.
2. In the bowl of an electric mixer, or with a hand mixer, cream together the butter and sugar until light and fluffy, about four minutes on high.
3. Add in the eggs and vanilla on medium, one at a time, until well incorporated.
4. With the mixer on low, add in the flour mixture until just combined. Stir in the chocolate chips, pecans, and oatmeal with a spoon. Drop the dough in rounded tablespoons on to a cookie sheet, and bake for 10-12 minutes, or until lightly golden brown.
5. Cool for a minute on the sheet, then cool completely on a cooling rack… if you can wait that long to eat them!
